800g passata (you could liquidise tinned tomatos or use eq weight real ones if feeling posh)
2 tablespoons tom puree
2 tablespoons sugar/maple syrup/honey etc
1 teaspoon vinegar
salt and other seasonongs to taste

dump in saucepan, bring to boil, simmer 10-20 minutes til you've reduced liquid by around 50%.
