Salmon fillets ...

Need an idea for something different for salmon fillets - maybe a tomato based sauce with pasta. Of course, it needs to be quick and easy! Grin

Any ideas?

I cut em into chunks and do salmon kebabs with pepper, onion and cherry tomatos on the skewers. Marinade salmon in olive oil, honey lemon juice and garlic mixture first.
The kebabs don't take long to cook, and I serve with noodles mixed with sesame oil and soy sauce.

very quick and easy is to bake the fillets in a roasting tin with butter / lemon rind / lemon juice and salt and pepper for about 8 minutes, at the same time boil some tagliatelle. When its cooked take the salmon out of the tin, throw the pasta in, add parsley, put on plate with salmon on top.
think its a Nick Nairns recipe.
have you tried looking at bbc food as they have quick ideas.

another one I do in the summer (again Nick Nairn - he did a whole book on salmon!)is to poach the fillet and then flake it, cook pasta and toss it with olive oil and pesto, stir in some rocket and then add the salmon, serve with parmesan - shaved rather than grated.
Again all it takes is the time to cook the pasta.
If you want more details I can look in the book for you.

Thanks .... my mouth's watering at the thought of every one of these. Tonight it'll be a Zubb's quick 'n' easy pasta & tagliatelle (unf. the pesto is out as DS has nut allergy).

our fave is salmon capers and pasta,
pan fry salmon break it up while its cooking add lemon juice and black pepper then a hand full or two of capers add in cooked pasta drizzle over olive oil and serve

hope you like it - feel under pressure now!!

The actual recipe is - for 4 -
50g (2oz) butter
finely grated rind and juice of one lemon
4 salmon fillets
350g (12oz) tagliatelle
4 tablespoons chopped parsley

although it works fine with just throwing it all together! You need to scrape all the salmon bits out of the tin to mix with the pasta.

I marinade them in 2 tablespoons honey (warm honey first so it's runny!), 2 tablespoons soy sauce and 1 tablespoon sesame seed oil an then grill till done (caramelises on the outside because of the honey), serve with stir fried veg and steamed rice or baby potatoes and steamed veg.

The one I used to do loads with salmon was a watercress sauce, there are loads of recipes for it. Even ds2 would eat it!
