Last minute realisation that dinner guest is vegetarian

My very good cook friend is coming for dinner tomorrow with her DH & DCs.

I am all set to make a JO meaty pasta. Nothing fancy, it's a laid back early dinner.

I have just remembered she is vegetarian!!! (not sure how I had managed to overlook his, we have been friends for 10 years!)

I thought about the JO caulifower and mac cheese without the topping (which contains pancetta). Worried it might be dull. Do vegetarians get fed up with macaroni cheese? (The JO one is yummy!)

Can anyone recommend a nice, not too hard, not too slog away all day, vegetarian recipe?

Make the mac cheese.Separate a portion to bake in a single pot and then put the topping on the rest.

Job done and all happy!

Thanks Theas. I think I will. I've made it a hundred times so it wouldn't be as stressful as making something new.

Sounds like a perfect dish to serve - most importantly you're comfortable making it & enjoy eating it yourself.

Get fancy ice-cream and cake for pudding & if they don't like the macaroni cheese they won't mind Wink
