Not amazingly summery but how about a Chinese style beef casserole? I found one on the BBC good food website (sorry, on phone and can't link) but I did it last week with egg fried rice, stir fried veg and prawn crackers. Very nice and not too heavy.
Cook it in gravy till its like tinned stewed steak then part bake some rolls till nearly done, cut open, stick beef in and top with cheese few min More in the oven and you have sloppy sandwiches! My fave
