Now would that mint be mixed in with the butter?

And what would you serve with it?

Absolutely anything. Yummmm

We have them with salads. Also especially yum with lamb since it goes well with mint anyway.

We used to put some fresh mint (small bunch) in with the water when boiling them, then add butter afterwards.

Yes - we (ie my mum!) added it to the water too.

Sorry missed that bit.

Yep, add bunch to the water. Then we have home made mint sauce on the side too.

I want some now.

yum i had forgotten that!
I would dribble butter over potatoes and sprinkle with fresh mint - season and serve!

My mother adds the mint just after you drain the potatoes, and then leaves the pan with the lid while she's getting ready to serve everything. I have a feeling that you shouldn't really cook mint for the best flavour (like Basil). We don't use mint becasue my dh hates the taste, but my mother always grows a big patch for the summer (it's very invasive though) and her potatoes are lovely. It's also really nice to push a big bunch in the water jug (looks pretty too).
