Ideas for what to feed people coming for lunch.

We have got some friends coming for lunch and I need some inspiration for what to cook.
Usually I would do a risotto or something but ideally I would like something I can cook the day before. One of the other family is veggie (no fish)
Obviously I could do cold meats, salads etc. But I want it to look like I have made more of an effort than that. I was thinking maybe a lasagne, and just do a separate veggie one.

Any other ideas?

What about doing a roasted chicken, home made roasted veg cous cous, salad, dips, nice bakery bread? Smile

How about a nice home-made vegetarian quiche or tart? You could still serve some cold meats etc and fancy salads too.

Think I might combine the chicken and quiche ideas.

Now, has anyone got a good quiche recipe?!

(and, silly question, how would you serve the chicken, would you cook it the day before and serve it carved, or would you serve it whole and hot for people to carve themselves. Sorry, am rubbish at 'entertaining')

Ignore the chicken bit in recipe, I would serve the chicken hot but already carved.
