Things to do with tortillas/wraps

I bought stacks of cheap tortillas from Approved Food and merrily made Bean Enchiladas every week for about the past 8 weeks. DS loved them at first (so did I! Tasty, filling and cheap) but we're both getting sick of them.

What else can I do with the stockpile of tortillas? I plan on making fajitas at some point. We're both veggie and DS won't eat mushrooms but other than that, anything goes.

Packed lunches with grated cheese/mayo/salad. Or roasted veg and goats' cheese.

Quesadillas.

You can use them instead of lasagne.

chop them up into crisp sizes (maybe bigger) and toss with a bit of oil ans salt and whatever other flavours you like (I love chilli powder but just salt is yum too) and bake them (keeping a close eye on them: they burn easily) and you've made your own tortilla crisps! Yummy, perfect with dips or on their own and quite filling.

baked (like duffle says) they are great toppings for salads. I also love a very thin omlette drizzled with sweet chilli sauce then rolled up in a tortilla for breakfast or lunch.

Oh and how could I forget that old weightwatchers stanby the tortilla pizza!

Smear with tomato puree then top with your favourite toppings and cook. Just be aware that the tortilla won't need much time to cook so you may want to part cook any toppings, for eg mushrooms aren't quite 'done' enough for me usually, so I give them a wee fry off before putting on the tortilla.

The classic weightwatchers way with these is to top with feta as you don't need much and it's lower cals, but of course you can do what you like.

I was going to say quesadillas!

I also often use them instead of lasagne, and I do a mexican type 'lasagne' with them as well, with chilli and sour cream rather than bolognese and bechemel sauce.

Cut them into small triangles and deep fry them to make nacho type crisps, you can season them with anything or put grated cheese and salsa on them and microwave until the cheese is melted for loaded nachos.

Fill them with vegetable curry or dahl and raita(sp).

DC like them with scrambled egg and sausages (vegetarian ones for you obv).

Stuffed with channa dahl or something similar or with kebabs so you can still handle them.

I stuff them with falafel, salad veg, a gherkin (swear by M rs ELswood) and tahini sauce. Then roll up tight and chow down. Yumarama.

Quesadillas are great. My top tip is to do them using a single tortilla folded in two with the filling in between, rather than stacking them. It makes them easier to turn on the griddle!

You could also cut them into strips, bake them until crispy and use them for tortilla soup. Google Thomasina miers tortilla soup for a wonderful recipe.

How about other Mexican things? Burritos and enchiladas for a start.

We often have them instead of sandwiches. My three year old loves a tortilla containing cream cheese and smoked salmon smile

There's a recipe for Mexican lasagne in Nigella's kitchen. You could probably google for it too. It is good!

I spread them with cream cheese and pesto, roll them up and cut them into little spiral sandwiches for picnics and lunchboxes, sometimes with houmous to dip them in.

Works best if you squish them with something heavy for a minute or 2 before snipping with scissors.

Toasted fajitas. Yummy, if you are veggie, use butter beans/kidney beans (or whatever) with courgette pepper and onion + chopped tomatoes and spices.
add to the tortilla add a little cheese, roll & put under the grill 'til browned. Yummy!

I was using them with falafel but then Tesco stopped doing their frozen falafel for some reason.

We do turkey mince enchiladas, as wraps with homemade chicken goujons in, chicken fajitas and baked and used as baskets to serve salad in.

We take 2, and between them put a layer of salsa, a layer of tuna, a layer of avocado, and a layer of cheese, then cook in a hot frying pan with a little olive oil... .. the tortilla goes crispy... known as " cheesy snacks" in our house!

Cut into triangles, lay on a baking tray, drizzle with olive oil/spray with frylight and sprinkle them with cinammon sugar. Bake until golden and crispy but not too crispy as they harden upon standing too.

Amazing with ice cream and caramel sauce wink.

Rub them with garlic, spread butter over them and pop in the oven for a few minutes - garlic bread crisps!
