Tonight I made brocolli pesto. It's delicious.Cooked brocolli, fried with garlic, lemon zest, olive oil, chilli flakes then whizzed with toasted walnuts, lemon juice, parmesan, salt. Might try cauliflower or courgette pesto next.
I blitz up broccoli and mix with real pesto, soft cream cheese and a little butter then mix that into pasta for DS, he's eaten it since he was weaned and is the only way he will eat 'green stuff'.
That sounds delicious. Another fun way to get brocolli into our meals without DH getting too fed up with it while I'm pregnant and devouring the stuff.
As luck would have it I have both a bag of frozen brocolli and an Italian husband, who can't possibly complain if I use the word "pesto".So that's dinner sort. Ta mucho!
