Veggie trying to cut down on Quorn

Seitan has a really meaty texture and is v high in protein. It is very easy to make in whatever flavour you like. If you like to just substitute meat in meals this could be a good solution?

sweet potato jacket potato with baked beans and cheese

I have a very easy chickpea curry
two tins of chickpea and one tin of tomato, an onion and a jar of curry paste

fry onion in curry paste and then add chickpeas and tomato, bring to the boil and then add 200ml of stock and then simmer for 20 minutes - this is lovely if served the same day but even better if served the next day. I serve with rice and a salad of chopped tom, cucumber, radish, mint, drop of lemon juice and spring onion or red onion.

it is so easy that it gets cooked most weeks in this house.

I make my own houmous just a tin of chickpeas and blend in the food processor, I don't drain the tin very well and this leaves the houmous moist. I add lemon juice and garlic. If I have tahini then I add it but if not I don't worry - I sprinkle paprika over the top and then serve on toast with sliced tomato. Whereas my dad spreads it on the sweet potato jackets and has with a leafy green salad.

Unchartered yes that is exactly the type of food I'd like to eat more of. Lentils, quinoa, that sort of thing. My DH is a meat eater but we don't have meat at home, so will keep up the Quorn etc a few times a week, but feel I rely on it too much at the moment.

ok, so how about chick pea curries, falafel, lentil burgers etc?

i'm not veggie, but don't eat meat (eat fish) and i can't think of anything more boring than the 'meat & 2 veg' style of food grin

I make shepards pie but swap the mince meat for a tin of green lentils,

I fry of the onions and chopped carrots, add the lentils and about 200ml of stock with two table spoons of tom puree, then scatter about a dessert spoon of plain flour over and add a little cinnamon and parsley and gently simmer for 20 minutes - use as normal

Unchartered I have been a veggie all my life but still use Quorn for everything, eg chicken style pieces in stir frys and curries, mince in lasagne, bolognese, etc and then have other things which meat eaters would eat ie sausage and mash, peppered steak and chips etc.

Hello,
I'm a veggie of many years and have never really got into quorn or meat alternatives. Instead, I use a lot of pulses, lentils and dairy based products. I post all our family favourites up here:

You could try jerk chickpeas which are easy and very tasty. Instead of using quorn in bolagnese sauce, you could try red lentil bolagnese which most people tend to enjoy- veggie or not. And you could add cheese to curries, such as this Pea, Paneer and Spinach curry Hopefully, you'll find some of my other recipes useful too.

what sort of meals are you using quorn in?

are you cooking for a carnivore and simply subbing the meat with quorn products?

For convenience foods, Sainsburys do the yummiest spicy bean burgers (in the frozen section).

This Nigel Slater curry is delicious

I really like Felicity Cloake's dal recipe (in fact am making it now!)

In summer, grilled halloumi with salad is yummy - google Ottolenghi, he has lots of great halloumi recipes (or spring for one of his books, they are amazing!)

I also make a big greek salad (chopped tomatoes, black olives, cucumber, red onion, feta cheese, olive oil, a nice vinegar of some description) and mix with quinoa for more protein.

Oh, home made hummus? blitz chickpeas, tahini, olive oil, garlic and lemon to taste. Add coriander, chillis, other herbs that you like to mix it up.
