Summer venison recipe

You could reduce a rose wine and cherry jam glaze - that's summery enough.

I usually do venison in casserole with juniper and bay and red wine, but that's pretty wintery.

Or you could do juniper and orange glaze (OJ, orange zest bit of butter and cornflour, 4-6 juniper berries to scent it) then put it onto a salad of mixed leaves and lambs' lettuce with an orange or lime, mustard and honey salad dressing

I have some venison and I don't know what to do with it.

I don't like carbs much, only really eat brown rice and couscous now and again.

Just looking for a nice glaze or sauce to cook it in, or a salad dressing that would compliment it and mixed leaves! smile Thank you x
