Chocolate bread & butter pudding?

I have about 6 mini choc-chip muffins which have gone stale Shock, so I wondered about using them to make a sort of bread & butter pudding.

Does anybody know if this is possible & if so, how? Thanks Smile

I have one for pain au chocolat that could be adapted:

4 PauC
100g dark chocolate
12 cardamon pods
175ml milk
275ml double cream
2 beaten eggs
50 g caster sugar
2litre slightly buttered gratin dish

Cut pain au choc in half and place in dish.
Chop 3/4 of choc and put on top.
Bash 10 pods and add to milk and cream in saucepan. Bring to the boil then remove from heat and stand for 30 mins.
Remove seeds from remaining pods and crush them.
Strain milk mixture into a bowl, add egg, sugar and crushed seeds and whisk. Pour over pain au choc, leave to soak for 30 mins.

Cook at 180oC for 30 mins, melt remaining choc on top and serve.

I don't have cream, but do have whole milk, custard & natural yoghurt. Do you think I could make it work with any of these? Also milk chocolate (Easter eggs!) instead of dark chocolate (they are milk choc chip muffins, I think)

Or just warm them up and serve with custard.

I got cream in the end as had to go to Sainsburys anyway. It was yummy, thank you Smile

If you have that 'problem' again they make a fab trifle, especially if you have cherries / cherry brandy :)
