I've bought waaaay to much salmon!

terryakki makes for a bit of a change (mustard, honey and soy sauce)

also, If you've got salmon skin, cut it into strips, fry in a little hot oil until it becomes crispy and add salt and chilli flakes - not healthy, but a great snack something along the lines of pork scratchings!

also salmon goes great with eggs, so Omlettes and scrambled egg are great.

I quite like poaching some in salted water (or could steam or microwave) and having it at room temperature with a bit of pesto mayo (bit of pesto into bit of Hellman's!) and some watercress or rocket in a crusty roll for lunch.

Last week had some wild rice, steamer over with about 8mins left, shoved in some salmon, then added some pak choi/frozen soya beans and sugar snaps for last 2min. Then sprinkled soya sauce and bit of sesaeme oil over the top at the end.

I would do a salmon en croute. For the filling, mash p some goats cheese with lime juice and black pepper. Delicious.

Wrap in proscuitto and bake in the oven.
I did this with white fish fillets last night, served with baked new pots, steamed samphire and hollandaise sauce.

2 ways we love:

make a marinade of grated ginger, soy, OJ and honey with a tiny pinch of five spice. Soak salmon in it then bake in parcels and serve with rice or noodles and steamed veg.

or

blitz black olives, capers, sun dried tomatoes, fresh curly parsley, a thick slice of bread (preferably a bit stale/dry) and fresh garlic together into a topping for the salmon and bake.

hairy bikers have a good recipe with ginger - maybe on their website. also delia's one with cheese/breadcrumbs/pesto mashed up and put on top is nice. or fishcakes. or hairy bikers fish pie which has breadcrumbs/cheese on top instead of mash. or maybe a variation of jamie's curry - curry paste rubbed into fish then fried and coconut milk added and some spring onions if you have them

Yep I've put most of them in the freezer but seeing as salmon is what we'll mostly be eating for the next couple of weeks I wanted to liven it up.

I'm making salmon quiche tonight, simple with a bit of egg, milk, spinach and grated cheese. I like to do several at a time as they can be put straight in the oven from frozen.

Fish pie

You can freeze them!

Salmon en croute wrapped in pastry with soft cheese and asparagus

Oriental with soy and sesame oil and stir fried broccoli and noodles

Flakes into pasta with crenels fraixhe and lemon

Griddled once you've coated the skin in Cajun spices, paprika etc, served with rice or Cous cous.

Forgot I had an order with the fishmongers for salmon steaks and went out and bought a load of salmon at the shop, so now I've got 24 salmon steaks to decide what to do with! I normally do them simply by doing a tinfoil parcel, slice of lemon on the bottom and bit of butter on top then straight in to the oven.

Any ideas of what else I can do with them?
