Veggie ideas for a cast iron casserole dish

I have won some cast iron cookware and while 'tis a thing of beauty, I'm a bit stumped as to what I will cook in it. I'm happy to just gaze at it, but would be nice to make some use of it as well. At the moment I'm thinking maybe a proper biryani but nothing else springs to mind. Any inspiration?

Season it first. Coat it in oil and then heat until smoking. Leave to cool and wipe dry but don't wash. Then you can cook liquids in it without it rusting.

My mum used to make amazing fritattas in cast iron dishes. Really deep pan, filled with sauted veg and then finished under a grill.

You could do a lovely aubergine moussaka, a vegetable paella, a vegetarian crumble.

Kale and/or chard gratin.
Baked fontina.
Spanakopita.
Crustless quiche.

Another thing I use my cast iron frying pan for: leek and goat's cheese tortilla, basically this Delia recipe with the bacon subbed for goat's cheese or feta.

I second biryani. How about dhal, and other curries? I love anjum anand's (sp?)books.
Or how about a veggie Boston baked beans? I'm not a veggie myself but sure you can get great use out of your lovely pan without meat.

Thanks for all the ideas - might try a biryani this weekend. Love chestnuts, so interested in the recipe if you can dig it out Reums.
