I have stupidly ordered 3 BAGS on my grocery order rather than 3 potatoes blush really not sure how I managed that!!

Sweet potato brownies! Seriously good, use good dark chocolate and dark muscovado sugar and they are the best brownies ever!

Sweet potato wedges, add little paprika!! Mmmm!!! Very yummy.
Use it for mash?

You can use them as an ordinary baked potato (they just take slightly less time to cook). They are also lovely chopped up in a curry.

Soup? J Oliver does a really good one with chorizo. (really tasty, filling and the kids love it)
Or roasted..they sort of caramelise and are really sweet.

I second the wedges, or I like them in a curry. On the plus side, you will find that they store really well and keep for aaaaages so don't panic too much.

Juggle with them? grin

Also, mashed with ordinary spuds makes lovely mash.

I just bake them, open, sprinkle on sea salt and a dollop of sour cream. Absolutely delicious.

Sweet potato Spanish omelette

I just substitute them for the normal potatoes in Delia's recipe

Machli Mon 25-Mar-13 17:39:44

Also roasted for Sunday dinner, with carrots, onions, parsnips etc. all sticky and yummy. Better than normal roasties imo.

Small dice and add to risotto with leeks.

Hugh Fearnley-Whittinstall has a lovely recipe for curried sweet potato soup - in his veg book - new favourite for DH!

They go well as a side with jerk chicken. Mash with some chopped/minced ginger, squeeze some lime juice into them, maybe add some chilli flakes.

Ottolenghi has a gorgeous sweet potato gratin recipe here

LOVE sweet potato wedges. Sprinkled with a bit of paprika.

Or chopped up and roasted with other veg to go with a roast dinner.

I made these the other day and they were unexpectedly delicious www.bbc.co.uk/food/recipes/lentil_croquettes_75719

The sweet potato, spinach and lentil dahl is delicious too.

Thanks - I will print all of these out.

H used some in a lovely stew last night (he says its "stew weather" at the moment!)

Ottolenghi's chilli-spiced sweet potato wedges with a lemongrass-ginger dip are the stuff of date nights round here. Recipe is from Plenty but you can see it here.
