Been in fridge all weekend, smells ok, think its okay to eat it?
Three days is usually my max, I'd be a little concerned!
I'd say it's fine.
It'll be fine if it was very fresh mince when you cooked it.
I had 7 day old home made minestrone for lunch. I feel fine. If it was off it would smell. I reckon it will be lovely after marinating for that long!
