When you've no time to shop and not much in what do you rustle up?

Looking for quick midweek dinner ideas from the store cupboard/fridge for that "in between weekly shops" time. I'm stuck in a bit of a rut because I seem to alternate between the same old things like risottos, omelettes (yawn!), chickpea and chorizo stew, various pasta dishes, salads etc. What are your midweek favourites?

Mine tend to be veg pasta ( i make up a big pot of tomato-based veg sauce and freeze in pots so there's always some in - added veggies depend on what's in fridge needing using up), also same with big pot of bolognese.
Jkt pot various fillings.
Tuna fishcake if leftover mash.
Try to make up extra, so Chick roast dinner on sun leaves enough for quick stir-fry next night (noodles veg), cous-cous veg & chicken, chick with veg rice.
I'm so bored of cooking and eating!

Tuna pasta
Pesto pasta
Tomato pasta
Takeaway!

pizza made with a bread mix,with storecuboard ingredients like salami,peppers,onions,veg?we have that quite a lot i found the recipe on good food i think.

Ah yes, pasta is always a good standby and no leftovers ever go to waste here!

Chickpea curry and rice/chapatis
Egg, homemade wedges, frozen peas
Veggie sausage casserole
Dahl
Something on toast

A spicy chickpea stew, pasta with tomato sauce. Bottom of the fridge....made from leftover meat & veg - chilli, soup, frittata, curry, kedgeree/ spicy rice with eggs & frozen peas, hummus.

I buy a block of coconut from the world food aisle - saves wasting most of a tin as you can chop off a bit and keep the rest in the fridge. Use it to make quick lentil curry - lentils, onion, ginger, currys spices, carrots, sweet potato if I have, stock and big slice of coconut block.

as children I remember we used to have something on a Monday or Tuesday night called 'choosing night' which basically meant we had cheese and biscuits/ grapes/ whatever left over cold meats there were from the weekend/ toasted cheese sandwiches etc etc etc. Basically we were allowed to make whatever we wanted from whatever was leftover in the fridge/ cupboards (shopping day was a wednesday!)
