Interesting chicken recipes?

Have over ordered on the internet shopping and have got loads of skinless chicken breasts. I want to make something a bit more interesting than the usual (casserole / roasted with garlic and lemon).

Any ideas?

ooo .. you don't use chicken breasts for casserole do you Shock?

well I got that out of my system Grin

how about

chicken fajitas .. need bread wraps, creme fraiche (half fat if you want), grated cheese and a schwartz (they are the best) fajita mix .. fun and filling

cut a slice in a chicken breast fill with boursin and wrap with bacon then cover in silver foil and bake for 20 mins

stir fry strips with beansprouts, mixed veg, garlic, soy sauce, chinese 5 spice

PS casseroles are best with chicken with a bone in it .. can always seperate from bone when feeding to children .. legs / thighs are good .. and they're cheaper Wink

DH does a good one .. beat chicken breast flat ... marinade in a bowl of lime juice, garlic and chilli in the fridge for an hour or so and then fry

or cut into chunks dip in egg (seasoned) then in crushed cornflakes and bake in oven for 20 mins for home-made nuggets

and we always buy chicken breasts unless we're doing a whole roast chicken (1 in the oven as I write)

Chicken in bacon with red wine gravy.
Wrap chicken breasts in strips of streaky bacon. Put in oven for 15-20mins to roast. Cut up a onion and 2 cloves garlic and saute on low heat in pan until soft. Add rosemary or thyme (whole) and black pepper. Then add 1 pint of stock and a good glug of red wine. Turn up to boil. When it has come to boil turn down to simmer and leave it till chicken is done. When all ready strain gravy and thicken if you like with cornflour. Serve with new potatoes and green beans - or whatever you fancy.

Have you tried chicken curry - saute onion, add selection of spices (or a curry powder mix), add the chicken chopped up and cook reasonably low for about 5 minutes. Add some chicken stock. Cook for 20 minutes. Add coconut milk a few minutes before end. Can add any veg like tomatoes, peas, etc that you fancy just before the stock.
