You should have added steeped peas and had pea and ham soup.

Well, what happened TSC? Was it rilly horrid or really very nice? I'm tempted to go to my butcher and get a two-quid ham shank myself. But please do tell...

I think this cut needs to be cooked for quite a while. A long slow braise in the slow cooker with celery and cannelloni beans or you could boil it with celery and onions, peppercorns and a couple of cloves. BTW is it salty? If it is, you might have to soak it overnight. Then you could have it with dumplings tomorrow.
