Any recipes to use up shallots?

I bought a load and don't need them. I'm vegi and like lentils etc. DH and kids eat meat (pref beef). Bonus points if you can incorporate a red chilli :o
(would a red chilli be nice in a salad?)

Just use them in anything you'd put an onion in.

Or:

chilli & shallot chutney
shallot/cheese tart
shallot gravy to go with meat.

I like them in yogurt as a dip (perfect with crisps) - I must try it with chili.

You could roast them with a load of other veg and any leftover you could put in fridge/freezer.

Veggie gravy...mmm.

I made a chutney with them.
Shallots, toms and chilli would be nice.

In this weather I'd do a spicy lentil soup with the chilli, shallots, red lentils, dried coriander and cumin. Blend well and serve with dumpling.

Right...am going to either try the shallots with feta or just oven roast them with other vegetables (also have a green pepper to use up now so that's a good idea) . Actually that could be Friday dinner. Chilli has gone into salad, sorry for drip feeding :O thank you everyone. Sos - save our shallots!

If you do the roasted shallots I always cover them in foil for much of the roasting time so that they are juicy and tender, just taking the foil off for the last bit of roasting. I sprinkle a bit of balsamic and olive oil over at start of roasting and a little more balsamic after; crumble the feta over once out of the oven. Serve with green salad and crusty bread.

Very nice pickled with a chilli stuck down the side. Follow any pickled onion recipe.

If you like thai salads, please try this - it is supremely tasty

Tofu Laap

It says to use red onions, but when I make it, I use shallots.

(For any non-veggies, using chicken instead of tofu works very, very well too)
