Marinate meat in rice wine, soy sauce, sugar and cornflour. You only want a little to just coat the meat.
Heat oil in pan.
Add aromatics (any odd bits you can find in fridge will do). Ginger, garlic, onion, spring onion, shallot.
Can also add roasted nuts.
Add sauce. You can just splash into the pan any combination of soy sauce, fish sauce, sesame oil, mirin to your fancy. Or you can be proper and make a sauce. Something simple would be chicken stock, soy, rice wine and cornflour.
I don't use premade sauces, sauce sachets with my stir fries.
I do buy bags of veg mix.
My favourite is to chop up chicken breast as small as I can, and the coat it in a cornflour/salt mix for half an hour.
I fry up chopped garlic and ginger, then add the chicken and veg. I add some rice wine vinegar and sugar to provide some moisture, and a sprinkling of five spice blend. Off the heat, I put on a teaspoon of sesame oil.
If I am using noodles, I will add to the meat/veg. If rice, I will keep it separate (no idea why)
