I only ever had one disaster - made banana muffins and forgot to add the salt. Tasted 'soapy' as sod. bicarb not neutralised by the salt but realised why straightaway. Also can bake recipe in tin if want to make big cake rather than singles. Better stop now as getting carried away with the gospel of the muffin! Enjoy!
