Need ideas for feeding my vegan sister, help!

33yo sister (so not a picky child) is coming to visit for four days starting this evening. She is a very strict vegan, we eat everything. I am so poor after Christmas, though. Does anyone have any cheap vegan meals they can suggest?

  • houmous, grated carrot, falafel and salad wraps (make sure wraps are vegan if buying)


  • vegan sausage and mash (think Linda McCartney sausages are vegan, abd cream mash with dairy-free spread and soya milk)


  • roasted veg risotto


  • lentil & vwg soup (dead cheap to make), spiced lentil, carrot and apple soup is good.


  • bean stew with couscous


  • baked bean & fake cheese toastie


  • butternut squash roasted and stuffed with roasted cherry tomatoes and any other veg you have hanging around.


  • tofu stir fry


  • tofu marinated in sauce, baked and served with homemade chips.


Loads more ideas, but have to get going!

oh, and how could I forget - jacket potatoes!

  • with baked beans, ratatouille, scrambled tofu, fried mushrooms, mixed bean salad...

Rice and dhal - I make my dahl taste rich and creamy using coconut milk.

Vege and chickpea tagine with cous cous and some Moroccan style salads.

Big tray of roasted root vege with veggie sausages and savoy cabbage.

Soup.

Peppers stuffed with rice etc and served with new potatoes and salad.

Beans on toast - check the bread though.

Pita filled with salad and humus.

Aubergine and tmato casserole.

Vegi soup.

potatoes and parsnip mashed together with garlic and a little bit of powdered ginger.

Rissotto - mushroom, veg etc.

Vegan food is generally by cheap if you're cooking from scratch but, you'll probably need to stock up on som soya milk and maybe vegan marg (pure or vitalite) if she's likely to eat that, or you use it in cooking.

For four days I might do:

  • Tofu and veg stir fry (either buy marinated tofu or marinate it yourself)
  • Curry, Dahl and rice (stick to 2 or 3 veg e.g. aubergine, spinach and mushroom, or cauliflower, pea and potato, rather than going for indistinct mixed veg).
  • Chilli with rice, refried beans, guacamole (make it yourself, shop stuff often but not always contains dairy) and tortilla chips or garlic bread OR veg fajitas with same dips.
  • risotto. spinach and mushroom with some garlic is good, or butternut squash.


For puddings, if you want them:
Fruit crumble and custard (birds powder with soya milk)
Rice pudding made with coconut milk, Thai style
Chocolate pud (I have a very simple recipe, must be available elsewhere too)
Cake (lots of recipes available).

Their chickpea piccata, with mashed potato, is lovely for example.

Also, if you like roast dinners, you can buy or make nut roast or similar and do veggie gravy, then all the usual roast root veg and green veg. Filling and quite cheap.

Slow cooked chick pea stew, kind of middle eastern style spiced with ras al hanout, cooked in tomato sauce with cumin roasted carrots and rice. Cheap, healthy and very yummy
