Veg curry recipe for NY Eve 'do'

Does anyone have a tried and trusted veg curry recipe please? I am doing curry for 18-20 people on NYE. Have decided to make Chicken Jalfrezi and a Lamb and Spinach curry, but would like to do a veg one too. Great if could be done in slw cooker, but not essential.Thanks.

Chickpea Curry

1 large onion, chopped
1 1/2 tbsp vegetable oil
2 garlic cloves,crushed
1/2 tsp chilli powder
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp ground ginger
1 x 400g can chopped tomatoes
1 tbsp tomato puree
2 x 400g can chickpeas
450ml vegetable stock (made with stock cube)

Fry onion in oil until soft. Add garlic and spices and cook for 4-5 mins over medium heat.
Add remaining ingredients and bring to boil, then cover and simmer for 1hr.

Tastes much better made in the morning and heated up for evening and serve with rice

I make this loads - very popular with veggie DH and all visiotrs!!

How about spinach with garlic or chickpea and potato? My DH loves potato and cauliflower? Let me know if you would like a particular recipe?

Thanks very much for the replies. The Chickpea one sounds really good - how many would that recipe serve please? The potato and cauliflower one sounds good too - could I have the recipe please? The spinach with garlic sounds tasty, but don't want to go overboard on spinach, as doing lamb with spinach one too (lovely recipe by the Hairy Dieters).

Potato and cauliflower curry

Dice peeled spuds into 1cm cubes - I would use about 1kg, plus a whole largish cauliflower for 6-8 people if that is all they are eating, so should be fine if there are other dishes for a large group.

Separate cauliflower into small florets, wash and drain

In a largish pan with a lid, heat a couple of tablespoons of veg oil on a high heat (no need to use olive oil, unless that's all you have).

Add in a level tsp of cumin seeds, and half a tsp of mustard seeds if you have them, when they start to pop, immediately add in the potatoes, cover with the lid and toss the potatoes in the spiced oil. Lower the heat, and cook with lid on for a couple of minutes, adding a little water if they start to stick, and when they are partly cooked, add in the cauliflower.

Add in 1tsp salt, half tsp turmeric, and 1/2-1 tsp of chilli powder to taste or some fresh green chilli, chopped finely.

Cook over a medium to low heat stirring occasionally, add in a little water to create a sauce, when they are tender, add in a tsp each of ground coriander and ground cumin, stir gently to mix in the spices and cook for a minute or so longer.

Serve garnished with fresh chopped coriander, lovely with Chapatis, naan bread or pitta bread, or as an accompaniment to your meat curries and rice.

the recipe says serves 4 - you an easily double it for a party - most people only have a spoonful or so especially if there are a few dishes
I also add a few cubes of frozen spinach sometimes and/or some peppers and cauliflower

They sound great thanks. Have done the chicken jalfrezi and the lamb, spinach and potato curry. Will try the veg ones above tomorrow morning. Will report back.
