OK, I'm considering doing Nigella's ham in coke...

It's gorgeous. The only I would say is that the shoving in a hot oven with the glaze on after boiling tends to burn it and dry it out a bit, and is not really necessary. The ham will be so tender that it will just shred like pulled pork, rather than slice, so now I just cut off the fatty layer, and shred the meat onto a plate without bothering to roast and glaze it.

It is fabulous. Mine was done in cherry coke and it siting on the top of te stove cooling. Tis a thing of beauty.

It's cooked and it's amazing!! Thank you all so much! One question though - do you keep the stock and if so, what do you use it for? I normally use the water I've boiled the ham in to boil up the turkey bones to make soup, but I'm not sure if coke flavoured soup would be a good idea...

Eurgh no way. It's just phosphoric acid with fat and scum on it. Clean the drains perhaps?

We've done two Nigella hams today Blush - one for tomorrow and one for Thursday buffet. As said upthread, never cook our ham any other way any more.

In the recipe she's adamant that you must keep the stock - comments below the thread give the impression it's used in a BBQ sauce in the book the recipe was originally published in... I didn't think it would be much good for soup though Xmas Smile.

Nigella recommends using the stock to make a black bean soup. I tried it but chucked the lot - was not impressed. It was way too sweet and sickly. I love Nigella but sometimes she's off her tiny rocker.

I usually love making split pea and ham soup with the stock, so it's a bit of a trade off doing the coke version, as it's wasted. But it's a worthwhile trade off I think.

You can still make a split pea soup with chicken or veg stock and put a couple of rashers of smoked bacon in for flavour and then add any leftover shredded
ham at the end. This would also be great for the less tender bits of turkey leftovers by the way.

I've kept the turkey bones and will boil them up for stock and soup instead. The ham went down very well indeed!

Gino d'Acampo did a ham in coke on tv the other week and I did that recipe, it was really nice, I did a maple syrup (I can't stand honey), mustard, spice and sugar glaze which after about 20 mins in the oven gave a nice sticky glaze.
