i have an organic chicken

i want to make stock out of it. and use the meat from the chicken for several meals.

any suggestions?

Are you handy with a boning knife? If not I would simply roast it with lemon, garlic and rosemary. Then I would serve roast chicken, next day I would strip off all the remaining meat and make a chicken pie or chicken risotto. Use the carcass to make stock and use that as a base for soups and sauces or freeze it.

agree with carmenere

I would roast it, then serve roast chicken, or strip it and use the meat by:
a)risotto
b)with tagliatelle, pine nuts, parsely, rosemary
c)in a pie
d) some other pasta dish
e) minced and fried to make chicken nuggety things (rissoles)
then use the carcass for stock and keep some of the flesh back for a yummy soup

Second Carmenere's suggestion - is exactly what I'd do.
We roast in roasting bags from Lakeland, and there's normally a good half pint of liquid in the bottom afterwards that makes a great stock starter.

There was an article in \link{http://www.timesonline.co.uk/article/0,,632-2127595.html\The Times} yesterday on 'cheap' meat.

We always buy organic/free range chicken and I am hoping that lots of idiots will stop buying it so that the price goes down (bird flu panic etc)!

Oh and what is that delicious hot spicy Thai chicken noodle soup called? That is really tasty and healthy way of using up leftover roast chicken and stock. Do a search and you will easily find a recipe.

Excellent article, I may be about to shoot myself in the foot as I haven't yet bought it but that book is cheaper on The Book People site! Just don't everybody buy it until I do!
