Have made Christmas pudding ice cream this afternoon, according to my mum's recipe - double cream (lightly whipped), equal amount of fromage frais, bit of sugar and brandy, lightly toasted christmas pudding folded in.
Admittedly, it's not frozen solid yet, but the taste so far isn't as I remember it. My instinct is to fold through a tub of (naice) ready made custard and some more pudding. But how do I do this once the stuff I have already made is frozen? Do I have to defrost it? Is that safe?
