Risotto Appeal

Am in the process of making a big risotto and could do with some help. Littlest ds1 loves it and I'm wondering if there is any way of storing some for him to have for lunch over the next few days. I know reheating rice is iffy and I'm a food storage novice - is this doable? Many thanks!

Cool the rice for your Son quickly, and put it in the fridge. Make sure you heat it properly tomorrow, and it will be fine.

Some people make thick risotto, and shape it into balls before cooling. Then(deep) fry to serve risotto balls.

Rice is fine if looked after. Treat it like meat - don't leave it around for long at room temperature. Keep in the fridge, cook thoroughly, and don't store for too long.

I freeze risotto - well, I freeze just about anything. Can't guarantee whether it's safe that way but I'm not dead yet.

I didn't realise there was an issue with rice, i have always had refrigerated left over risotto like that happens much and eaten it the next day. I am still alive to tell the tale Smile

I only heard about rice being risky when reheated quite recently. Have been reheating it all my life though and DH, DDs and I are all live and kicking.

I gave my DS some previously frozen risotto last week and he was not impressed. It didn't recook very well. Maybe because it was because of the mushrooms in it?

I made risotto yesterday, but didn't add any cream or cheese, and added it today after I heated it up. Not sure if that was a good idea or not. It wasn't as nice as it is fresh.
