Has anyone successfully made their own arancini? Mr. Helsi perhaps?

I love these things but they're so expensive. I wonder if I can make my own and possibly freeze some too for the kids lunches.

Any tips? Do I have to use those Ruskoline orange breadcrumbs or what?

sicilian fried rice balls, filled with all sorts of lovely things, like mushroom, chicken, cheese.

Don't ruin the illusion.

You get them in Italian delis. As tbb says they're arborio rice balls with different stuff in (I like mozzerrella in the middle). Fresh herbs, bits of veg etc, rolled in breadcrumbs and deep friend.

I've found some \link{http://italianfood.about.com/od/fritterssnacks/a/blr0030.htm\recipes} but I wanted to know if it's one of those Do Not Attempt This At Home dishes.

I'll try it then report back.

Years ago I had an old M&S cookbook - maybe a vegetarian cookbook - that had something v similiar - just with cheese in. I did make them, v successfully - but didn't deep fry them, I don't think. And believe me, if I can do it, it can be done easliy by anyone!

Spidey - i made them smaller than the ones you see in delis - less chance of them falling apart, I thought.

OK blu I'll give it a try. Did you use Ruskolin (strange orange processed breadcrumbs)? Or did you do it with your own? I'm trying to avoid them breaking up during the deep frying.

you can use leftover cold risotto, take a handful, push a piece of mozzerella inside and form the rice around it. Flour, egg and breadcrumb it twice to be sure and deep fry.
