Cheap but yummy meals

Am off to Asda in about an hour and I need some ideas for cheap but yummy meals that are either quick to make, or can be made in bulk and frozen.

Any ideas?

tuna pasta bake with tinned tuna and tomato sauce from tinnned tomatoes
lasagne/chilli or meatballs with pasta ( same ingredients for all pretty much except chilli powder)
Roast a chicken to last two days - first day with spuds, second day have a stir fry with rice and veg.

Preparation time less than 30 mins

Cooking time 10 to 30 mins


A mild vegetable chilli topped with triangles of golden brown cheese on toast, makes a delicious one-pot vegetarian supper.
Ingredients
2 tsp oil
1 tsp mild chilli powder
1 small onion, chopped
1 garlic clove, chopped
1 red pepper,de-seeded and chopped
1 medium aubergine, cubed
2 medium courgettes, sliced
400g can chopped tomatoes
400g can red kidney beans, drained
5 slices bread, cut into triangles
55g/2oz gruyère cheese, grated
salt and freshly ground black pepper



Method

  1. Heat the oil in a pan and add the chilli powder, onion, garlic and red pepper. Fry quickly for about 5 minutes.
  2. Stir in the aubergine, courgette, tomatoes, kidney beans, salt and pepper. Bring to the boil, cover and simmer for about 25 minutes. Place in a warmed serving dish.
  3. Preheat the grill to high.
  4. Toast the bread on one side. Place on top of the ratatouille, toasted side down.
  5. Sprinkle the bread with the grated cheese and grill for about 4-5 minutes until the cheese has melted and is golden brown.

Ratatouille - Peppers, Aubergine, Courgettes and Onions cut into similar sized chunks. Sautee with a bit of garlic for a few mins. Add 1-2 tins chopped tomatoes, a tsp of oregano and some fresh basil if you have it, a dash of balsamic vinegar and salt and pepper. Allow to stew for about 20 minutes. Serve

I serve it sometimes as an accompaniment to grilled meat or fish and sometimes I serve it as a pasta sauce.
Sometimes I also add some black olives and butter beans to make a veggie stew.
