Just had something yummy!

I wanted something really quick for dinner tonight and stir fried some onion, garlic, red pepper and green chillies and threw some cous cous into chicken stock - waited for cous cous to absorb and them mixed the 2 - was really delicious and pretty healthy I think! MMmmm. Just sharing if anyone is looking for quick meals!

OOh i will try that one.i made something tasty tonight too, the ingredients are:
2 carrots grated
2 eating apples grated
2 onions chopped
1 tsp cummin
1 tsp oregano
1/2 tsp of mustard powder
3 tbs tomato puree
1/2 pint of water
420 g tin of kidney beans
1 tsp brown sugar
2 veg stock cubes (i use boullion)
fry the onions,crumbled stock cubes, apples and carrots for 5 mins in some olive oil stirring continuously
then mix tomato puree with the water and add that with the rest of the ingredients but not the kidney beans.
put it all into a casserole dish add the beans put in oven at 180 for 45 mins.
I had it with jacket potato, sour cream and salad but would also go lovely with rice.

sorry that shoulkd say when you add the rest of the ingredients simmer for further 2 mins then put in casserole dish and add kidney beans.

oooh - that sounds good too! Will try that one! Thanks. Also had wine with dinner - maybe that is why I am so enthusiastic tonight! Grin Anyone else want to share a yummy dinner?
