getting rid of stuff in fridge .. do you think this would work

marinate chicken breast in juice and zest of a lemon with crushed garlic pan fry .. add spinach and ricotta (nutmeg and season) mix with pasta

and do you reckon kids would eat it?

suppose I could bake the chicken and make up the spinach and ricotta as a sauce on the side?

if you heat the ricotta with out a stabilising agent it will weep and not be creamy
you either need to add some cornflour and stock or some kind of behcamel sauce or chopped vegetables like onions or potatoes or a tomato sauce with olive oil.

sounds like two separate meals to me

i wouldn't use the ricotta. garlicky lemon chicken with spinach and pasta would be delish

have the ricotta with strawberries for afters.

(not sure about nutmeg with chicken)

youcould bake the chicken in yogurt and garlic and stir in the rocottia and spicnsah at thend and serve with pasta?

Bash chicken breasts out between cling film with rolling pin. Stuff & roll with spinach & ricotta mixture, tie up and bake.

Serve with mini roast pots with rosemary & garlic.

got no yogurt .. am trying to empty fridge

can't go to shops cos DD asleep .. have 5 year olds invading at 3.30

Susan Hicks, an 80s cookery writer used to do a column in old-styly rude-hippie mag She called Bung Cuisine Twiglett. I think I may have subconsciously absorbed her approach.
I think your initial instincts are right except that I too would keep the ricotta to have with fruit for pud.
Kids that don't eat your cooking should be sent to stand on the roof with a suitable sign round their necks.

aha .. good nutrition, an art lesson (making their own signs of course) and exercise (getting on the roof) all rolled into one

The only thing missing is the tinned sardines IMO. That's for the finishing touch to all the best SE London playdates - massed barfing over the people carrier once they are safely out of your house.

easiest with mashed potaot mix in the spinach and stuf the middle with ricotta

or make pizzas with spinach ricotta and chicken topping
