I'm going to once again destroy your lemon drizzle recipe because I have no eggs

So am thinking I can substitute for milk.

Original recipe

4 eggs
9oz/250g Marg

  • Caster Sugar
    12oz/350g Self raising flour
    3 tsps baking powder
    6 tbsp milk
    grated rind of 2 lemons


    I totally messed it up last time as I had no self raising flour so there was a huge debate into how much baking powder I needed for that and then I discovered that I didn't have enough butter.

    In the end I used 6tsps of baking powder, plain flour and a bit of butter and a dolop of veg oil!

    It came out fantastic though.

I'm sorry.

Mix all the ingreadiants and put in a lined tin (I used a 2lb loaf tin) and cook for about 30-40 mins.

For the icing use the juice from the 2 lemons and 12oz icing sugar. Warm the juice and mix with the sugar. When the cake is warm prick it all over and drizzle over the cake. It soaks in and it tastes divine.

I converted it to chocolate cake and it's yumm. Really light and a bit squidgy and soft.
