Tonight Mumsnet I am going to make Lemon Drizzle but....

What size tin do I need and what temp do I cook it at (fan oven)?

Where did you get the recipe from? Surely that should tell you tin size and temp?

This was the Americanized version, I had to guess at the pan size and haven't made it yet--see what fits!


INGREDIENTS
9 oz sugar
9 oz butter
12 oz self-rising flour
4 eggs
3 t baking powder
6 Tbsp milk
grated rind from 2 lemons
juice from these lemons separately

METHOD

Preheat oven to 325 degrees/Gas Mark 3/170C/ Mix all the ingredients together in the mixer except for lemon juice. Bake in 9 X 11 (or 13) baking dish. Bake for 30 to 40 minutes until knife comes out clean. While the cake is baking, squeeze the juice from the lemons and heat for 20 seconds or so in the microwave. Set at least one tablespoon aside to drizzle into the cake when it comes out of the oven. Take the balance of the warm lemon juice and add icing sugar (confectioners sugar) to consistency you like. As soon as you take the cake from the oven, prick cake with fork and pour over the reserved warm lemon juice. Next, spread the icing over the cake to finish it off.

I just pop it in whatever tin is clean at the time.

An ordinary roasting tin is fine.

A square tin is fine.

Then I put it on about 170 for 30mins.

Don't forget to prick the cake and squeeze lemon over it before icing it.

It's a 2lb loaf tin.

Can't wait to eat it, I really fancy something like this atm.

I made this today!! Have been thinking about doing it for ages, got the boys to help me. I used Marslady's recipe but halved the ingredients and baked it at 170 for 30 mins in a 10 x 5 tin and it was delicious! Boys loved the icing!! Hope you enjoyed yours too.

I made it on Monday and it was fantastic. Big compliments from everyone who tried it. I think you could use the sponge recipe to make a party bake like the M&S one - the sponge was so nice.

You can swap the lemon for cocoa powder. I put half a dozen spoons in I think plus some hot water.

Yummy yummy yummy!

To ice I melt a large bar of plain/milk chocolate (in the microwave) and add 1 dollop of veg oil. This makes the icing really smooth.

Spread on top and leave to set or not. MMMMMMMMMMMMMmmmmmmmmmmmmmmmmmmmm

you need to get off mumsnet sharpish young lady and only come back when you have a full complement of green & blacks, kalamata olives, humous and pesto
