A bit of a dull nutrition-type question....

but, to what extent are the nutrients drained/retained in roasted veg?

I know that steaming veg is supposed to retain nutrients and I also know that boiling the buggery out of veg drains the nutrients, but what about roasting?

sorry had a quick look ..doesnt really say ..but there is a lot of baked veg in there ,i would think that baked would keep more of the nutrients in as they are not being taken into the water as in boiling ..if you are interested in nutritian i recomend superfoods by steven pratt md and kathy matthews is my new food bible at the mo,,,tells you nutritinal content of foods and wha they do to help your body protect against diseses lose weight etc. as an idea perfect breakky [just had] is oats blueberries honey nuts wheat germ flax.......really yummy followed by pommigranete juice [sorry bout spelling]

AAA - thanks so much for looking. I'm with you in that it would seem to me, that baking would retain goodness, I just wanted to know for sure!!

Will look at superfoods on Amazon now - thanks.
