Jerusalem Artichoke Salad?

I'm thinking about making this. Fried Artichoke (maybe parboiled first, then sliced, then fried). Leaves. Maybe bacon? Tomato? Capers? Egg?

yes, sounds fine - lots of strongly flavoured interesting ingredients to mask the horrible tasting watery texture of jeruslem artichokes

I got Jamie's dinners for Christmas and he suggest ways of cooking Jerusalem artichokes but Asda online didn't have any. He suggest roasting them like potatoes. Would make sure they didn't have a "watery texture".

Quick tip - do not eat jerusalem artichokes if you have a hot date, interview or have to leave the house at all. They give you really terrible wind (I bet Jamie Oliver didn't tell you that!)

Hmmm, I parboiled them, then fried them, with some pancetta (cubetti) (olive oil, balsamic vinegar, little gem lettuce). They were ok, but a bit sweet, which was odd.

Bozza, you can probably find them at your local farmer's market or equivalent? They're in season now, I think. (But too seasonal/odd for regular online shopping.) We get ours in our Abel and Cole box.

Oh, DH has said he really liked this salad, so I might well do it again. Maybe use capers as well, to distract a bit? Not sure what to do about the sweetness.

I made sort of potato pancakes with them the other week - mashed potato, mashed jerusalem artichoke, bit of creme fraiche all mixed in with eggs and about a tbsp of flour and fried. They were nice if a little airy fairy for dh who gave me his best 'I am really humouring you now by eating these' look.

Hmm, I'd describe those as potato cakes, rather than potato pancakes ... but yeah, might try that. Here is a link to my other thread, about making latkes (Polishy sort of potato pancake) with other random root veg.

that sounds good - I have some beetroot that everyone is turning their noses up at.

It worked well. I wouldn't have it be more than 25% beetroot, though. Ours was mostly celeriac, bit of beetroot, bit of sweet potato. More sweet potato would be fine, though.

I was impressed to make something with beetroot that the boys would eat, frankly. I normally just juice it, and drink it myself.
