TOMATO AND RICE SOUP

I know I have asked this before but stupidly i have mislaid the recipe.

Hubby is home today after me taking 2 asthma attacks in 8 hours and I want to eat this. As he is being generous right now I want him to do homemade tomato and rice soup not a tin- mean of me i know

So come on netters help me out please.

I use a tin of toms whizzed with a tin of m and s tomato pasta sauce then stir in and cook the rice

straight outta nigella

thanks enid I'm sure marslady(i think) done one using tinned tomatoes and stock etc too wait and see what else comes back

Rice, tomato and cumin soup

Serves 2



Preparation time less than 30 mins

Cooking time 10 to 30 mins







Ingredients
½ medium onion, finely chopped
2 garlic cloves, crushed
30g/1oz butter
1 tsp ground cumin
85g/3oz long grain rice (basmati)
2 tins of chopped tomatoes
290ml/½ pint chicken or vegetable stock
small bunch parsley, chopped
sea salt and freshly ground black pepper
4 tbsp olive oil



Method

  1. Sauté the onion and garlic in the butter, stirring occasionally, until the onion is soft and translucent. Add the cumin, rice, tomatoes and stock and cook for about 10 minutes until the rice is cooked.
  2. Add the parsley and season.
  3. Ladle into warm bowls, drizzle with olive oil and serve.

Tomato and Rice Soup
Serves 4

2 tablespoons oil
1 onion, chopped
1 teaspoon basil
1 bayleaf
1 tablespoon flour
1 carrot, diced
1 celery stick, chopped
1 teaspoon browm sugar
1 tablespoon cider vinegar
Large can chopped tomatoes
1 pint water or vegetable stock
1 clove garlic, crushed
Soy sauce, to taste
Salt and pepper, to taste
2 fluid ounces milk
3 tablespoons cooked rice
2 tablespoons roasted sunflower seeds, optional

Heat the oil in a large saucepan, saute the onion, garlic and basil for 5 minutes

Stir in the flour, add the carrot, bayleaf, celery, sugar, vinegar, tomatoes and water (or stock). Bring to the boil then reduce heat, cover and simmer for 20 minutes.

Remove from heat and cool slightly then blend with the soy sauce and salt and pepper. Add the milk and rice, return to the pan and heat through.

Serve sprinkled with sunflower seeds, if liked.

It was in fact your recipe that tempted me last time. Just found the thread

Cant wait till dinner time now till dh has made it. we are also going to have steak with pasta tomato and basil

must milk this feeling crappy thing more often lol

It's very nice and just the sort of comfort food you need when you're not feeling well.

only wish he had made an even bigger pot now, they boys are loving it too
