dessicated cocunut. what can i do with it?

i have been given a kilogram of the stuff by mil darling. other than making little samosa type things, what else could i do with it?

Coconut pyramids. Can't remember the exact quantities but it's something like:

2 eggs, beaten
4oz? dessicated coconut
3oz sugar
Glace cherries, quartered
Beat the eggs and the sugar together then mix in the coconut. Form into pyramids with wet hands and stick a cherry quarter on the top. Bake at a low temp until golden.

I was dribbling over the recipe yesterday while making ds1's birthday cake. They look really retro and 70s but yummy.

I put it into curries, and also some sort of baked muesli recipe I've got somewhere. Not huge amounts though, so some of the other ideas here would probably be better...

Coconut Meringue Slices

75g/3oz Marg
100g/4oz Caster Sugar
2 egg yolks
2 tbsp milk
few drops of vanilla essence
175g/6oz Self raising
pinch salt

Topping
2 egg whites
100g/4oz caster sugar
50g/2oz Desicatted coconut
Chopped cherries and nuts

  1. Heat oven to 160, grease and line a tin (11x7 inch)
  2. Cream marg and sugar, beat in egg yolks, milk and essence.
  3. Fold in flour and salt and spread in the tin.
  4. Beat egg whites till fluffy, fold in sugar and coconut.
  5. Spread mixture over base and spinkle with cherries and nuts.
  6. Bake for about 45 mins. Cut when cool.


    Rich Coconut Tartlets

    100g/4oz Short Pastry

    Filling
    4 tbsp jam
    50g/2oz marg
    50g/2oz caster sugar
    1 egg
    50g/2oz dessicatted coconut

  7. Heat oven to 180. Roll out pastry thinly and cut in to rounds using a 3 inch cutter and line 12 patty tins
  8. Place half a tsp of jam in each
  9. Cream marg and sugar, add the egg and coconut.
  10. Place 1 tsp of the mixture on top of the jam.
  11. Bake for 20 mins until the sponge has risen and is golden brown.


    Coconut and Orange cake

    225g/8oz Self raising flour
    pinch of salt
    100g/4oz marg
    100g/4oz soft brown sugar
    50g/2oz dessicatted coconut
    1 egg
    3 tbsp milk
    1 orange, grated rind nd juice.

  12. Heat oven to 180. grease a 7inch cake tin.
  13. Mix flour salt and marg and rub together.
  14. Stir in sugar and coconut the beat in egg and milk.
  15. Mix together for a soft consistency.
  16. Place mixture in prepared tin and bake for about 1 hr.

Chocolate and Coconut Squares

225g/8oz dark choc digestive biscuits
75g/2 3/4 oz butter or marg
170g/6oz can of evaporated milk
1 egg, beaten
1 tsp vanilla flavouring
25g/1oz caster sugar
50g/1 3/4 oz self raising flour
125g/4 1/2oz desicatted coconut
50g/1 3/4oz dark chocolate (optional)

1)Greasea shallow 8 inch square tin and line the base.
2)Crush the biscuits in a polythene bag with a rolling pin or in food processor
3) Melt the butter or marg in a saucepan and stir in the crushed biscuits until well combined.
4) Press the mixture in to the base of the tin.
5) Beat together the evaporated milk, egg, vanilla and sugar until smooth. Stir in the flour and desicatted coconut. Pour over biscuit base and level the top.
6) Bake in a preheated oven at 190 for 30 mins or until the coconut topping is firm and just golden.
7) Leave to cool in the tin for 5 mins then cut in to sqaures. Leave to cool completly in tin
8) Carefully remove the sqaures from the tin and place on a board. Melt the dark choc and drizzle it over the sqaures to decorate.

mmmmm, nbg, they sound wonderful
i think i shall do a marathon baking thing, and get them all ready for the trick or treaters!

must stock on butter stuff though
