Need some serious inspiration..........

I've copied and pasted this from the other thread I posted it - so I'll (hopefully) get some more response

hey ho. Well no success balance is showing as £200 under the overdraft limit - but no money coming out the hole in the wall.

Right what can I do with the following ingredients, must be as filling as possible (ie no baked beans on toast type things as it would never satisfy my lot - DS1 had 3 slices of my homemade pizza tonight - DH is only having 2 - as usual - and I only had one!)

6 eggs
Potatoes (lots)
Carrots (a few)
Red Kidney Beans (they need soaking first though)
Spaghetti
chicken/beef stock
1 small swede
Onion (I've still got about 25p left which I found in my pocket today] - so I can go and buy one tomorrow.


Ideas on a postcard please

you could make a stewy type thing

just boil the potatoes, carrots, kidney beans, swede, onion in the stock. you could also add some bits of spaghetti if you break it into little bits (be like noodles)

oh - and as many days recipes as possible please (2 would be nice - as it gives me tomorrow and Saturday to find someone to lend us tenner

Spanish Omlette with the pots and eggs - very filling.

Vegeatable caserole with the rest or get tin toms instead of onion and do a vegetable spagetti Bolognaise.

Hearty soup, with the stock, swede, onion, carrots, potatoes, kidney beans, break some of the spaghetti into it? Any bread or flour etc to make bread?

Some sort of frittata (think that's what it's called anyway) with the potatoes, eggs etc.

Kind of run out of ideas there.

No tomatoes (even tinned), peppers, mushrooms or anything kicking around?

When do you/DH get paid? Do you have a credit card that you could buy a few bits and pieces on?

Nope no tomatoes, peppers or mushrooms - actually I lie got 2 small mushrooms left over from the pizza tonight LOL.

I've got flour to make bread (just as well we've been suriving on homemade bread instead of shop bought for the last 2 months )

DH gets paid on the 27th.......credit - maxed out.....already - and payment overdue.

Vegetarian chilli with kidney beans, carrots, swede and 1/2 onion. Serve with spaghetti.

Spanish tortilla with 1/2 onion and potatoes, fry a big frying pan load up until tender then use 3 eggs mix and pour over, leave to set on a very slow heat then brown top under the grill.

Cut the chicken into strips then poach in chicken stock. Add some spaghetti and a bit of chilli to taste. - Chicken noodle soup!

Make oven chips from the rest of the potatoes - cut into chip sized pieces, shake in a bag with a little oil then spread out on a baking tray until done. Serve with a fried egg each - egg and chips!

So that is four decent sized meals out of your stuff - is that enough to last you for the rest of the week???

if they eat that much, soak the beans now!

could do a frittata thingy (eggs onion pots swedes) with spicy bean salad (tiny cubed raw carrots and a little more onion, nice dressing inc chilli and a bit of sugar)

then you've got the stock and spag in hand too

or jacket spuds with veg chilli.

The homemade oven chips are scrummy have made those before.

I've just thought of two more!

Stovies - I'm sure you know how to cook these!

and Tattie peratties! You grate a few potatoes and mix with a couple of beaten eggs then fry a big spoonsfull at a time until all brown and crispie. You get loads out of a batch and they are really filling. I suppose they are like a thin rostie potatoe. Mum used to make these and put them in a newspaper poke, we all loved them! If we were lucky she grated a little cheese on them once they were cooked. Yum Yum.

Just read your thread QoQ . Been through similar a few times before DH started his own business, hope things improve for you.

How about when you have a couple of quid, getting some tinned tomatoes (value/Aldi/Lidl whatever but cheap), see if you can cadge a red chilli, a couple of cloves of garlic and some dried oregano and you can make a really nice pasta sauce. Gently fry the garlic, chilli (pierced to stop it exploding) and oregano, add the tomatoes (if you can get 4 tins and 2 chillies this will go far) and gently simmer for about 30 mins, remove the chilli, you chop one of them and add back to the pan if you wish and serve with pasta. Out of Jamie Oliver's book.

I know you said no beans on toast type recipes but fried eggy bread can be quite filling, you could boost this with a tin of cheap beans.

scaryman - what do you mean "why"? - I'm confuzzled (as we would say in this house).

Soap - NO - I've already have 3 people on MN help me out when I didn't ask for them to (nearly said didn't want them to, well I didn't but their help was much appreciated) - and they know who they are - and what they did ). It doesn't feel right accepting help off complete strangers!
