Quick - do I cook pork or not before making mince out of it?

ds is at park and want to make some spicy pork mince for tea and have a couple of pork chops in fridge.
Do I fry them then mince or mince raw and cook mince?

Either I guess... I remember my mum making mince out of cooked leftovers but obviously you buy mince raw from the shops.
