I messed up Choc Rice Crispie Cakes!!!

I'm a new-ish mum and haven't made them before, didn't have a recipe, melted some choc over pan of warm water then thought I should add some syrup, honey etc, didn't have any so added maple syrup and the chocolate went solid. Ahhh.

Found some choc drops in the cupboard so started afresh and melted them and added the rice crispies, is that all I was supposed to do?? Should anything else go in?

Yes you just melt choccie and stir in rice crispies..great t do wiht toddlers...in fact I cheat even more and micro choccie..lol

I am a reasonable cook and actually found these hard to make. They were either too sticky or too dry and diddn't stick. After numerous trys we gave up in the end.

yes EITHER melted choc on its own or syrup, cocoa, and butter.

I messed them up too

I think it's something to do with melting the choc, ie in a bowl which doesn't touch water. Makes the choc 'seize up'

Love to know the best choc to use ? I used cadburys dairy milk. To scared to try again !

My MIL makes them with the melting milk chocolate method but I find these a bit dry unless you get the proportion of crispies to choc right. The way I was taught to make them and which my dds like best is to melt butter, golden syrup together then add cocoa powder. They stick together well and are a bit more gooey.
What I have made successfully using the melting choc method is nests. Melt 125g milk and 125g plain choc in a bowl in the microwave together with 50g butter. Crumble the shredded wheat up into the melty mixture then shape into nests on a baking sheet. When they've set you can fill them with mini eggs. It's a great way to eat Shredded Wheat (or use it up after your kids have rejected it) and they go down a storm at the school cake sale.

Good American Recipe to try if you like:

1/4 cup butter (about 3 ozs)
10 ounces marshmallows, * see note
6 cups Rice Krispies
8 oz chocolate chips (optional)

  1. Melt butter in large saucepan over low heat. Add marshmallows and stir until completely melted. Remove from heat.
  2. Add Rice Krispies cereal. Stir until well coated. Add the chocolate chips if desired.

  3. Using buttered spatula or waxed paper, press mixture evenly into buttered 13 x 9 x 2-inch pan. Cut into squares when cool.

    Yield: 24 squares, 2 x 2 inches.


    MICROWAVE DIRECTIONS: Microwave butter and marshmallows on full power in large glass mixing bowl for 2 minutes. Stir to combine. Microwave on full power 1 1/2 to 2 minutes longer. Stir until smooth. Add cereal; stir until well coated. Press into pan as directed in Step 3.

    Serving Size: 8

DH uses a similar method to the American Recipe below. I'm quite a good cook & I messed them up too. He found it hilarious. I used melted choc & 2 melted Mars Bars to give them some gooiness cos I find the choc only ones too dry. Apparently my Mars/Choc ratio was way out according to the *ffin' Gordon ramsay of our house
