Pumpkin Soup

Nice seasonal warming soup, good for babies!

1 small - medium pumpkin
1 small red onion
1 pint of vegtable stock
some black pepper

cut the pumpkin into pieces and remove the skin and inside seeds. Cut the onion into small pieces and add to the pumpkin. Put both either in a steamer or in a saucepan of hot water and cook until soft. Drain the pumpkin/onion and add the vegtable stock then blend to a nice puree. Add black pepper to taste!

I also LOVE pumpkin soup. Interesting to add red onion. I usually fry the pumpkin and onion in a bit of oil first, I'll try it without next time.

i came on here to look for a recipe for pumpkin soup!! there is a small farm near us who grow them and this year i WILL get round to making some soup!!!

Can I recommend Delia Smith's version? She quarters the pumpkin and roasts it in the oven first with olive oil. Bloody MARVELLOUS it is.

hmmmmmm i think it will be in order to buy several pumpkins and make loads of different recipes............need to buy a freezer really don't i!!!

yes, I would agree with MP and Delia that roasting it first adds to the flavour - otherwise it can end up a bit bland IMO.
same with parsnip soup

Has any one got Delia's recipe to hand? I have just has a look on her website and the roasted pumpkin soup is not mentioned.
