Which bits can I do ahead of time?

I'm doing a birthday party on Saturday afternoon. The menu (I think) is:

  • chips and dips. Only guacamole will be homemade. I know this has to be done on the day.
  • crudite - carrots, cucumber and celery, I think. Can be done the day before, stored in water in fridge overnight?
  • filo parcels - brie and cranberry, and feta and pumpkin. All homemade. Can I make the fillings the day before, store them in the fridge overnight, and make the parcels on the day?
  • carrot cake with mascarpone frosting. I've never frosted a cake before. Is it better to make the cakes the day before, and then fridge them, so they're more solid, before frosting? I'm sure I read that somewhere.

    I'm sure there will be enough time to work on the day, but I don't think I have any grownup help, beyond DH, showing up early for the party. Well, I have hired a babysitter for the DSes for a couple of hours that morning, so it could be worse ...

    Hmm, just realised I have bought no decorations, plates etc etc. Arse.

    At any rate, which bits of food can I do Friday night?

I'd do the crudites, fillings for the filo parcels and carrot cake the day before - I don't know whether it would be better to do the frosting on the day but I'd certainly do the cake the day before.
