my cheese sauce tastes of flour - I am assuming I didn't cook the flour and butter enough? Is there any way I can save it? Do I just simmer it for ages?

I HATE making cheese sauce angry

yes I'd cook it for longer.

thanks meggle

... and add some more cheese, some black pepper and the juice of half a lemon

thanks BIWI - juice of half a lemon, really? won't it curdle?

Nope! Honestly. Just stir it in really well. It gives a nice sharpness to the sauce.

If you're not sure, try a quarter of a lemon first.

A spoonful of mustard brings out the cheese flavour as well IMO.

I am rubbish at making cheese sauce, so these days I cheat. I use low fat creme fraiche, heat it up, add grated cheese and a bit of mustard and voila, cheese sauce is ready!

thanks for the tips, it was fine in the end

might try that pecanpie

What did you do with it in the end, migola?

have to admit i went for the mustard rather than lemon but i promise to try lemon one day! and just cooked it for a while

grin

Whatever you felt most comfortable with is good! Glad it worked out in the end.

Just remember to cook it slow enough
to cook the flour out. no matter what you add flavour wise it will always be grainy texture wise if the flour isnt cooked out long enough.

<tries to count number fo failed cheese sauce attempts but runs out of fingers and signs knowing needs to take own advice.>
