Nah the flour makes little difference tbh.
Well I make my choux pastry with strong plain flour.That'll be why they have a hole in the bottom.Actually don't know I haven't done it for years (since I was at school), but I used to part cook mine, slice them open and scoop out middle and then return to oven for second part.

If they didn't stick and you didn't loose the bottom there should still be two layers so should be salvagable.Did they puff up in the oven?
