Beans Salad

works with Tinned beans, chick peas and also cooked whole lentils (the whole brown or green ones from the Asian grocers or Puy lentils which are 3 times the price):

Make your vinaigrette in a bowl:
two thirds olive oil to one third vinegar, juice of half a lemon, half tsp salt, generous helping pepper, tsp mustard (I vary between wholegraiin and Dijon), 2 tbsp chopped parsley/chives/oregano/whatever herb you have.
Add a chopped fresh tomato.
Add finely sliced spring onion (I grow bunching onions expressly for this dish)
Add drained cooked beans/lentils.

mix, taste, adjust seasoning if needed and serve.

Someone once served the beans salad to me and it was soooooo delicious.
It was three types of tinned beans with some lovely home made dressing. I think there was onion or maybe green onion I can't remember but it would have been lovely to serve this on the hot day. Does anyone know how to make it?
