What vegetables would you serve with salmon and spicy cous cous?

My resolution is to make sure the DCs get their five a day. Since I can't be sure they eat the fruit and veg they get at school I need a vegetable accompaniment for this firm favourite. Any suggestions. Maybe ratatouille?

I was going to suggest something Mediterranean, like sauteed courgettes or aubergines.

I'd put roasted peppers, onion, courgette and aubergine diced through the cous cous.

Broccoli with Tabasco!
Oven Roasted mediteranian veg,
green beans or asparagus with butter and lemon juice
Carrot, cucumber and pepper sticks

I always serve one of the above with salmon and cous cous.

I love ratatouille but I'm not that keen on cooked tomatoes with salmon for some reason. I'd go for either a big mixed salad, probably with onion at least in the couscous, or I'd go for simply cooked veg - two or more out of wilted spinach, garlic mushrooms, green beans, broccoli - go for contrasting colours/flavours.

Another vote for roasted onion/pepper/courgette.

Or a green veg (broccoli, beans, spinach) with a lemony dressing plus some roasted almond flakes.
