Meat free recipies without pulses

I really need to reduce my weekly supermarket spend, I already shop at Aldi and hunt around for bargains.
I need some inspiration regarding new recipes, I have IBS and cant eat pulses or red peppers. If you have a recipe that you can share I will be very grateful smile

Macaroni cheese? Lots of protein and calcium from the milk/cheese. And can be added to - make the cheese sauce with onion, add peas/other veg to the cheese sauce.

Mushroom risotto? You can get risotto rice quite cheap and often a mushrooms are on offer for £1. The only other ingredients you need are an onion and some garlic and a bit of either butter or olive oil and stock cube.

Leek and potato pie?

Vegetable hot pot.

Veggie tagine.

Stuffed green peppers! Cooke onions, carrot, mushrooms...cooked rice and tinned toms, herbs, soya sauce, herbs... Pop into green pepper and top with some mozzarella or goats cheese and bake in the oven. Very nice!

Veggie lasagne - just make a red sauce with mushrooms, carrot, courgettes, leeks, etc and layer with the white sauce and cook as normal.

Pizza - yummity tum!

Courgette frittata, tortilla

Paella

Risotto

Stir fry/egg foo yung

Cheese and onion pasty (ready made pastry is fine)

Soya chunks - made into a very simple curry. Fry onion and mushrooms, add curry powder and the pre soaked chunks with a little water and have with rice.

Omelettes are nice but not very 'filling' unless they are big thick ones with veggies.

Jacket potatoes are good - either normal spuds or sweet potatoes.

If your IBS isn't affected by peanuts try stirring peanut butter into vegetable curry for protein. It's particularly nice with coconut milk based curries. Quinoa is also a good protein source but can be expensive.

Risotto - I did a lovely butternut squash one at the weekend and can type out the recipe if you want it.

Thai curry with vege and tofu, or cashew nuts or omelette strips for protein.

Vegetable soups with pearl barley to bulk them out a bit - or dumplings.
