I only made one new year's resolution this year, and that was to make more cheesecakes. So my aim is one a month. January's was white chocolate and raspberry, an easy no bake affair. So if you could only have one more slice of cheesecake before you die, what would it be?! All recipe suggestions welcome!

Well in Feb I will be making a raspberry one which you bake. It was on the cover of Baked and Delicious and DS has coveted it since the issue came out so he will be getting that for his birthday next week
I really love baked ones and a tangy citrus one would be lovely, lime preferably. Not over keen on the chocolate ones as they tend to be quite creamy and synthetic taste

It's a fairly plain baked middle, ginger nut base and poached rhubarb topping. Although if you have the GBBO book the recipe in there is better I think.
If you want a pink one, it being Valentine's, then it has to be this one and, rhubarb is one of the few native fruits in season right now. Save the raspberries for summer when they are Scottish!
No bake lemon cheesecake. Can't find recipe right now, but loads of lemon juice & rind, and a gingernut base. Mmmmmmmmm.

I did a pecan nut and toffee baked cheesecake that was lush.
Chop up creamy toffee into chunks and stir in with the pecans.

So many cheesecakes so little time.
Have rhubarb from the garden in the freezer so maybe it's going to be rhubarb.
My raspberries were definitely Scottish, also from the freezer from last season

I made a lovely chocolate and lime cheesecake with ginger nut biscuit base. Cant remember the recipe but I think I found it on MN!.

These sound amazing, Interesting that they nearly all use ginger biscs as base,not digestive,which is not nearly as nice as ginger. I did once use posh Duchy's Originals Lemon Biscuits and that went down well.

Anyone got any tips to stop the base going soggy in a baked cheesecake? How deep do you make the base? Do you use greaseproof paper underneath?

I went to a friends house for dinner on friday and she had made a chocolate an salted caramel cheesecake.
She knows I am not a huge fan of chocolate desserts but she knew I would love this one (we meet for dinner regularly! She obv pays attention!).
Well..... I felt like I had died and gone to cheesecake heaven.
I shall be making one at the next opportunity!!!

My aunt made a sea salted caramel and pecan cheesecake recently. It was so nice I accidentally made a bit of a sex noise at the table.

Strawberry and black pepper-sounds grim, tastes divine! Make sure you add loads more pepper then you think you need!
The raspberry baked went down a treat, even with my suspect cooking skills
Now I just need to make my base a bit more exciting, was just plain digestives and butter and I hate ginger nuts so need something different.
I quite fancy white chocolate and raspberry or a rhubarb one now
I made cranachan cheesecake for burns night last year, did a no-bake vanilla cheese mix, and put a little bit of whisky and some fresh raspberries through it. Raspberries and toasted oats on top, and -here's my stroke of genius- a hob nob base. OOooft! It was sexy.

Lemon with a ginger biscuit base.
this one is fa mascarpone cheesecake with rhubarb glaze ( I never bother with the chocolate coated strawberries)
