What method do you think is best to send reasonably expensive jewellery?

RM Registered or Hermes signed for? I'll obviously pay for insurance too.

And is it okay to change method of delivery once listed as long as you tell the buyer and don't charge them any more than you said you would (or refund them if it's less?)

Hermes don't cover jewellery and you will need Special Delivery with RM. Standard signed for is not sufficient. And no don't change the delivery method after the auction has ended. You are not allowed to charge more after either. And no need to refund if you weigh and price up first.
