What meals do you cook regularly -?

I tend to think joint of meat pulled pork beef stew etc but really need to think of more Vegi ones to keep cost down .
Going to do egg and chips tonight - tomowow a Vegi stew maybe ? Any advice welcome!

Cost savers could include,
Big pot of veg & tomato sauce spice up with herbs. Split make veg chilli adding red beans etc.
Use some for pasta bake adding a bit of cheese or smoked bacon.
The above is nice with eggs poached in it served with crusty bread.
Like you've said a joint / chicken can be stretched for a good few days, put plenty of veg in .
Lots of mnrs, add lentils but it's not to my taste.
What stores to you have & how many you feeding?

Roast chicken. - dinner 1 with all trimmings
:: dinner 2 with mash n veg or daphinoaise pots with veg
Dinner 3 all bits left mixed with BBQ sauce with onions and mushrooms bunged in oven served in baguettes with hm wedges

Sausage n veg bake - chipolata or normal sausages placed on top of chopped peppers onions carrots mushroom and tinned potatoes sprinkled with paprika bake for 30mins (chipolata) 45-50mins (fat sausages) we have it with garlic bread - great after work have it all prepped in tray bung in oven turn on and wait.

Curries are good we make extra so freeze some so quick after work with freshly cooked rice.

All our meals serve 2 adults and 2 children (5yrs and 18mths)

Roast peppers, courgettes and red onion at 180 in some oil, about 1 1/4 hours. Add couscous and some chopped feta.

Tonight we had tomato soup with bread and margarine, which can be very cheap.

Tomorrow we'll have chicken wraps and chips, with whatever salad is on offer. We grow a lot of herbs which helps.

Hi I'm feeding 4 -got a asda sainsburrys near by -Thankyou I just get stuck in a rut .
Mon was chicken breast and veg
Tue beef stew and peas and dumplings
Did pulled pork last night on baguettes
Tonight egg wedges and beans
Some Vegi option out of your fab ideas for tomowow

I do have a joint of pork in the freezer but going to try not to use it till next week Smile

Big Joint of gammon boiled can make
Ham, egg and chips
Carbonara pasta
Ham & spicy tomato pasta
Ham, mushroom and pea risotto
Then use stock it was cooked in and trimmings to make ham and pea soup (onion/potato/frozen peas) add dried split peas to bulk it out

This vegetable balti is delicious and even my super fussy children will eat it. It says it serves 4 but it's more like 8, it makes a vat full!

We often do LizzieMacQueen's thing, which ticks the vegan box too. We do it with red onions, and add tomatoes and aubergines, and tend to brew the cous cous with balsamic vinegar. I always do shedloads, and mysteriously it has always all gone in the morning (DP and our lodger and the teenagers all have a habit of coming in late and foraging, you can tell what they really like by whether or not all the leftovers are gone, and whether or not there are wrappings from the late night takeaway near the bin).

Cheap and easy bean stew

Garlic and onion fry
Oregano
Paprika
Tom purée
Chopped tomatoes
Spinach
Cover and cook
Add beans - butter/fava/cannellini
Water
Olive oil
Add lid into oven for half hour/ serve with rice or couscous

Lots of protein too

Your chicken breast and veg meal I'm guessing was a breast each which can be quite expensive, something like fajhitas bulked out with peppers and salad would only need 2 or 3 between 4 of you.
Shredded or diced chicken stew again can reduce the number of chicken breasts you go through - or use thighs/legs which are a cheaper alternative to breasts (our local butcher does chicken thighs in garlic marinade at £1.00 each or 6 for £5

Last night I did a chicken mushroom and Spinach risotto but with long grain rice and used 1 breast for 2 adults and a child.

Fry onion garlic and breast cut up
Add mixed herbs or spice of choice
Add chopped mushrooms and butter
Add 2 cups of rice with 4 cups boiled water
Add stock cube
Cover and cook for 15/20 mins

We make puttanesca pasta regularly - all store cupboard ingredients (bought from home bargains so super cheap per portion) .

I do a lovely halloumi stew

Basically a block of halloumi chopped into dice size cubes chucked in with chopped mushrooms, cherry tomatoes, frozen onion, chopped peppers, frozen spinach a splash of olive oil salt pepper and half a jar of pesto

Cook it in the oven for about an hour stirring every ten mins and serve with rice or chips/ roast potatoes

I also sometimes use chicken instead of halloumi

Chicken breasts are expensive, I use thighs instead. Also, any meat can be sliced or chopped to mix with the veg or pasta, rice, etc. so you don't need a whole chicken breast for each person.

I'm in a bit of a rut ATM but often do pasta with a small amount of bacon in the tomato sauce, or sprinkled over chopped peppers. Broccoli and blue cheese is a good addition to pasta, or any cheese you like that will melt if blue cheese isn't your thing. Cut the broccoli into small pieces, including stalk, blanch and drain then add to a warm pan with a little oil just before pasta is ready, add pasta to broccoli and add cheese then stir to melt.

Leek, bacon and potato pie. Slice potatoes into matchsticks, soften a couple of leeks and brown some bacon pieces. Add half and half cream and milk (enough to cover) and bake for an hour in the oven, first half an hour with foil on top, second without so it doesn't brown too much before potatoes are cooked. Serve with salad and crusty bread. Heats up well as well and Ds loves it.

Pasta with bacon and courgette. Slice both thinly and fry whilst pasta cooks. When they're all cooked stir in creme fraiche/Philadelphia and grated cheese. Et voila!

Risotto is cheap and can use up bits and bobs and leftovers easily.

copperpot chestnut are fine and also I sometimes chop up the big flat ones (portobello are they called?) ...or the closed cap budget ones from sainsburys, they all work well Smile
